THE CLIMATE
The optimal ripeness of the grape and its balanced acidity are defined by a distinctly Mediterranean climate, characterized by warm summers and mild winters, influenced by cool mountain winds and humid sea breezes.

THE GRAPES
Grenache and Carignan are the jewels of the D.O. Montsant, allowing us to genuinely express the landscape and essence of our parcels. Additionally, we complement our wines with another native variety, Macabeo, and two well-adapted foreign varieties: Syrah and Cabernet Sauvignon.

THE VOICE OF
THE HARVEST
The climatic context of each harvest is always narrated by the yeast.
The notes of a dry summer, the melody of a rainy autumn, or the rhythm of a windy day—each vintage, as unique and unrepeatable as the previous one, is reflected in the wines we create, thanks to the yeast that captures their essence.

THE MASTER
YEAST
Through a rigorous selection process, we ensure that only the noblest yeasts become the maestros orchestrating our winemaking alchemy.
We select 150 grape samples from the most emblematic vineyards of Carignan, Grenache, and Syrah, ensuring that only native yeast takes center stage.
After pressing the samples, we add vinous alcohol (10% vol.) to reveal the most vigorous yeasts.
After two weeks, the samples showing fermentative activity are evaluated organoleptically and microscopically to select the most resilient yeasts with ideal morphology.
Once the master yeast is selected, the fermentation of our wines begins.
